Hoisin Lamb (21 Day Wonder Diet: Day 13)

Ingredients

- 250 g lamb fillets
- 2 tablespoons hoisin sauce
- cooking spray
- 350 g watercress, trimmed
- 1/3 cup fresh mint, coarsely chopped
- 1 small green apple, sliced thinly
- 1/2 small red onion, sliced thinly
- 2 tablespoons lime juice
- 1 tablespoon light soy sauce
- 10 g fresh ginger, grated
- 1 small red thai chile, chopped finely
Recipe
- 1 spread lamb with hoisin sauce. spray medium frying pan with cooking oil; heat pan, cook lamb. cover lamb, stand 5 minutes.
- 2 meanwhile, combine watercress, mint, apple and onion in medium bowl.
- 3 combine juice, soy sauce, ginger and chilli in small jug. add to salad, toss to combine.
- 4 serve salad topped with sliced lamb.
