Flounder Alla Margherita

Ingredients

  • Servings: 4
  • 1/4 cup olive oil
  • 1/3 cup butter, can use margarine
  • 2 lbs sole, can use flounder
  • 1 (16 ounce) can tomato sauce
  • 2 tablespoons parsley, chopped
  • 1 teaspoon oregano leaves

Recipe

  • 1 about 20 minutes before serving, in a 12" skillet, over medium heat, in hot oil and butter (or margarine).
  • 2 cook fillets 2-3 minutes per side, until fish flakes easily with fork.
