Portuguese Smothered Cod

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 12 ounces sausage, polish will do if you cant find portuguese, chopped
  • 1 garlic clove
  • 2 lbs kale, stems removed, finely chopped
  • 4 potatoes, thinly sliced
  • salt
  • pepper
  • 4 cod fish fillets
  • 1 lemon
  • 1/2 cup wine
  • 1/2 cup fish stock

Recipe

  • 1 heat olive oil; add sausage; add garlic.
  • 2 add kale and cook down.
  • 3 in a casserole layer the thinly sliced potatoes in bottom.
  • 4 make 4 beds; put cod on top of potato layer; salt and pepper to taste.
  • 5 divide kale mixture 4 ways; top the cod.
  • 6 juice the lemon over the cod.
  • 7 pour wine and fish stock around.
  • 8 cover with foil paper.
  • 9 bake 30 minutes at 400 degrees fahrenheit.
