Favorite Fish Casserole

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 lbs flounder fillets, deboned
  • 1 tablespoon lemon juice
  • 2 tablespoons margarine or 2 tablespoons butter, melted
  • 1 (10 1/2 ounce) can condensed cream of shrimp soup
  • 2 tablespoons real sherry wine (not cooking sherry!) (optional)
  • 1/2 cup mild cheddar cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • paprika, to taste

Recipe

  • 1 arrange fish fillets in a shallow baking dish and sprinkle with lemon juice.
  • 2 pour melted butter over the top.
  • 3 bake in a preheated 400 f oven for 15 minutes.
  • 4 heat soup, add sherry, and pour over over fish.
  • 5 sprinkle with cheese and continue baking at the lower temp of 300 f for another 15 minutes.
  • 6 sprinkle with parsley and garnish with paprika.
