Lamb Fillet With Mozzarella

Ingredients

  • Servings: 4
  • olive oil
  • 4 lamb cutlets, pounded, about 6 ounces each
  • 4 slices mozzarella cheese
  • 2 tablespoons capers, rinsed
  • 4 slices tomatoes

Recipe

  • 1 heat oil in skillet.
  • 2 season lamb with salt and pepper.
  • 3 cook for 2 - 3 minutes on each side until browned.
  • 4 place a slice of cheese on each one, followed by a sprinkle of capers and a slice of tomato.
  • 5 cover and cook 6 - 7 minutes and cheese is melted.
