Ingredients

- olive oil
- 4 lamb cutlets, pounded, about 6 ounces each
- 4 slices mozzarella cheese
- 2 tablespoons capers, rinsed
- 4 slices tomatoes
Recipe
- 1 heat oil in skillet.
- 2 season lamb with salt and pepper.
- 3 cook for 2 - 3 minutes on each side until browned.
- 4 place a slice of cheese on each one, followed by a sprinkle of capers and a slice of tomato.
- 5 cover and cook 6 - 7 minutes and cheese is melted.
