- 3 haddock fillets, cut in half
- 2 tablespoons olive oil
- salt and pepper
- 1/4 cup shallot, diced
- 2 1/2 cups wine
- 2 cloves roasted garlic
- 3 tablespoons cold butter, cut into cubes

- 1 preheat the grill to medium high heat.
- 2 lightly oil the grill. drizzle the fillets wit oil and season with salt and pepper. place the fish delicately on the grill and cook for two minutes per side.
