Moroccan Roasted Salmon With Mango Salsa

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 1/2 cups chopped peeled mangoes (about 1 large)
  • 2 tablespoons finely chopped red onions
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons orange juice
  • 1 1/2 teaspoons harissa (a hot red pepper sauce)
  • 4 salmon fillets, skinned (about 1 1/2 pounds total)
  • 1/4 teaspoon salt

Recipe

  • 1 preheat oven to 450º.
  • 2 combine chopped mango, onion, mint and orange juice in a bowl. cover and chill.
  • 3 spread harissa over both sides of salmon fillets; sprinkle with salt. place salmon on a baking sheet coated with cooking spray. bake at 450º for 20 minutes or until the fish flakes easily when tested with a fork.
  • 4 serve with the mango salsa.
