Moroccan Roasted Salmon With Mango Salsa

Ingredients

- 1 1/2 cups chopped peeled mangoes (about 1 large)
- 2 tablespoons finely chopped red onions
- 2 tablespoons chopped fresh mint
- 2 tablespoons orange juice
- 1 1/2 teaspoons harissa (a hot red pepper sauce)
- 4 salmon fillets, skinned (about 1 1/2 pounds total)
- 1/4 teaspoon salt
Recipe
- 1 preheat oven to 450º.
- 2 combine chopped mango, onion, mint and orange juice in a bowl. cover and chill.
- 3 spread harissa over both sides of salmon fillets; sprinkle with salt. place salmon on a baking sheet coated with cooking spray. bake at 450º for 20 minutes or until the fish flakes easily when tested with a fork.
- 4 serve with the mango salsa.
