Cantonese Chicken

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 16 ounces chicken fillets, cooked (500g)
  • 8 ounces pineapple chunks (225 ml, reserve the juice)
  • 1 medium onion, finely chopped
  • 2 tablespoons soya sauce
  • 1/4 teaspoon ground ginger
  • 1 cup chicken stock
  • 2 tablespoons cornflour, mixed with a little water (cornstarch)

Recipe

  • 1 place the cooked chicken pieces, pineapple pieces and the chopped onion into a casserole dish.
  • 2 stir all other ingredients together in a pot until it gets a glazed look.
  • 3 pour sauce over the chicken, onion and pineapple pieces.
  • 4 cover and bake at around 375 degrees fahrenheit for one to one and a half hours.
