Grilled Salmon With Tomato/basil Salsa

Ingredients
- Servings: 4
- 12 ounces salmon fillets, cut into 2 inch pieces
- 1/2 cup fresh cherry tomatoes, cut in quarters
- 1 roasted red pepper, cleaned and finely chopped
- 1/2 cup sweet champagne (sparkling wine or prosecco can be used)
- 1 garlic clove, finely chopped
- 1 tablespoon brown sugar
- 1/2 cup fresh basil, chopped
- 3 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- salt and pepper
Recipe
- 1 pre heat and oil your grill to prevent fish from sticking.
- 2 rub salmon with olive oil on both sides and set aside.
- 3 mix all other ingredients in a bowl and refrigerate.
- 4 sprinkle salmon with salt and pepper and grill on both sides for 3-4 minutes each.
- 5 plate salmon and top with salsa, serve immediately.
