Grilled Salmon With Tomato/basil Salsa

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 12 ounces salmon fillets, cut into 2 inch pieces
  • 1/2 cup fresh cherry tomatoes, cut in quarters
  • 1 roasted red pepper, cleaned and finely chopped
  • 1/2 cup sweet champagne (sparkling wine or prosecco can be used)
  • 1 garlic clove, finely chopped
  • 1 tablespoon brown sugar
  • 1/2 cup fresh basil, chopped
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • salt and pepper

Recipe

  • 1 pre heat and oil your grill to prevent fish from sticking.
  • 2 rub salmon with olive oil on both sides and set aside.
  • 3 mix all other ingredients in a bowl and refrigerate.
  • 4 sprinkle salmon with salt and pepper and grill on both sides for 3-4 minutes each.
  • 5 plate salmon and top with salsa, serve immediately.
