Ingredients

- 1/2 cup olive oil
- 1/4 cup tomato paste
- 1 garlic clove, crushed
- 1 tablespoon chopped fresh basil
- 1 teaspoon black pepper, freshly ground
- 500 g lamb scotch steaks
Recipe
- 1 combine oil, paste, garlic, basil, and black pepper in a bowl, add the lamb and coat thoroughly.
- 2 cover and place in refrigerator for at least 4 hours.
- 3 remove lamb from marinade, pat dry with a paper towel and grill for 6 to 10 minutes each side, basting as needed with marinade or pan fry 6 to 10 minutes each side.
