Apricot Ginger Chicken

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 4 chicken breast fillets
  • 1 tablespoon oil
  • 2 cm fresh ginger, peeled and grated
  • 3/4 cup apricot nectar
  • 2 teaspoons dry sherry
  • 1 teaspoon light soya sauce
  • 1 teaspoon cornstarch
  • 2 teaspoons water
  • 1 green onion, chopped
  • 1/4 teaspoon ground cumin

Recipe

  • 1 cut chicken into strips.
  • 2 heat oil in skillet, cook chicken until cooked through and golden brown.
  • 3 remove from skillet and keep warm.
  • 4 to make sauce, combine ginger in skillet with apricot nectar, sherry and soya sauce.
  • 5 bring to boil, stir in blended cornstarch and water, stir constantly over heat until sauce boils and thickens.
  • 6 add green onions and cumin.
  • 7 serve over chicken.
