Ginger Fish Bite Horses' Doovers

Ingredients

  • 9 ounces scallops
  • 9 ounces fish fillets
  • 9 ounces raw shrimp, shelled
  • 1 egg
  • 1/2 teaspoon grated lemon, zest of
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley
  • oil (for deep frying)
  • 1 tablespoon cornstarch
  • 2 fluid ounces lemon juice
  • 6 fluid ounces chicken stock
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 teaspoon freshly grated ginger

Recipe

  • 1 preheat the deep fryer to 350°f.
  • 2 mix the cornstarch with the lemon juice in a saucepan until well blended.
  • 3 stir in the remaining ingredients, and then heat over a low to medium heat, stirring constantly, until the sauce is boiling and thickened; keep warm.
  • 4 place the seafood, egg, lemon rind, lemon juice and parsley in a food processor and blend until well mixed but not puréed.
  • 5 when ready to serve, drop rounded teaspoons of mixture into the hot oil, a few at a time, and fry until well browned.
  • 6 drain on kitchen paper and serve hot with the dipping sauce.
