Middle Eastern Lamb

Ingredients

- 500 g lamb fillets
- 1 tablespoon oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon dried mint
- 1/2 teaspoon turmeric
- 10 spinach leaves, shredded
- 1/2 cup plain yogurt
- 2 teaspoons cornflour
- 1 tablespoon water
- 1/2 cup sultana
Recipe
- 1 trim meat of fat and sinew.
- 2 slice across grain into long thin strips.
- 3 heat oil.
- 4 add 1 teaspoon ground cumin.
- 5 1 teaspoon ground corriander.
- 6 1 teaspoon dried mint leaves.
- 7 1/2 teaspoon turmeric.
- 8 stir fry 1 minute.
- 9 add meat and cook until browned.
- 10 add spinach and cook 4 minutes.
- 11 mix together cornflour, yoghurt and water and add to pan.
- 12 add sultanas.
- 13 let sauce thicken over heat.
- 14 serve immediately with couscous.
