Middle Eastern Lamb

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 500 g lamb fillets
  • 1 tablespoon oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried mint
  • 1/2 teaspoon turmeric
  • 10 spinach leaves, shredded
  • 1/2 cup plain yogurt
  • 2 teaspoons cornflour
  • 1 tablespoon water
  • 1/2 cup sultana

Recipe

  • 1 trim meat of fat and sinew.
  • 2 slice across grain into long thin strips.
  • 3 heat oil.
  • 4 add 1 teaspoon ground cumin.
  • 5 1 teaspoon ground corriander.
  • 6 1 teaspoon dried mint leaves.
  • 7 1/2 teaspoon turmeric.
  • 8 stir fry 1 minute.
  • 9 add meat and cook until browned.
  • 10 add spinach and cook 4 minutes.
  • 11 mix together cornflour, yoghurt and water and add to pan.
  • 12 add sultanas.
  • 13 let sauce thicken over heat.
  • 14 serve immediately with couscous.
