Chicken In Marmalade Sauce

Ingredients
- Servings: 4
- 4 chicken fillets, no skin
- 1/4 cup flour
- 1 teaspoon curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 125 g butter
- 4 tablespoons vegetable oil
- 2 tablespoons sherry wine
- 1/3 cup marmalade
- 1/3 cup orange juice
Recipe
- 1 mix flour, curry, salt and pepper together in a freezer bag.
- 2 place chicken in bag and coat all pieces.
- 3 heat oil and 80g of the butter in frypan, add chicken, cook for 10 minutes.
- 4 remove, keep warm.
- 5 add leftover ingredients to frypan, stir until combined, then pour over chicken or serve in a gravy jug.
