Ginger Glazed Salmon

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 4 (6 ounce) salmon fillets (about 1 inch thick)
  • cooking spray
  • 1/2 cup pineapple preserves
  • 1 1/2 tablespoons lime juice
  • 1 tablespoon dijon mustard
  • 1 1/2 teaspoons bottled ground fresh ginger (such as spice world)
  • 1 teaspoon bottled minced garlic
  • 1 teaspoon low sodium soy sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Recipe

  • 1 preheat oven to 425°.
  • 2 place fillets in a 13 x 9-inch baking dish coated with cooking spray. combine preserves and remaining ingredients; pour over fillets.
  • 3 bake at 425° for 15 minutes or until fish flakes easily when tested with a fork.
