Ginger Glazed Salmon

Ingredients

- 4 (6 ounce) salmon fillets (about 1 inch thick)
- cooking spray
- 1/2 cup pineapple preserves
- 1 1/2 tablespoons lime juice
- 1 tablespoon dijon mustard
- 1 1/2 teaspoons bottled ground fresh ginger (such as spice world)
- 1 teaspoon bottled minced garlic
- 1 teaspoon low sodium soy sauce
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Recipe
- 1 preheat oven to 425°.
- 2 place fillets in a 13 x 9-inch baking dish coated with cooking spray. combine preserves and remaining ingredients; pour over fillets.
- 3 bake at 425° for 15 minutes or until fish flakes easily when tested with a fork.
