Grilled Slamon Fillet With Summer Vegetable Relish

Total Time: 50 mins Preparation Time: 40 mins Cook Time: 10 mins

Ingredients

  • 1 cucumber, peeled, seeds removed, diced
  • 1 tomato, diced
  • 1/4 red onion, diced
  • 1 cup fresh corn kernels
  • 1 zucchini, diced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon sherry wine vinegar
  • 1/4 cup olive oil, divided
  • salt
  • pepper
  • 4 (6 ounce) salmon fillets

Recipe

  • 1 in a bowl, combine vegetables, dill, vinegar, 3 tbs olive oil, and salt and pepper to taste; let rest for 30 minutes.
  • 2 meanwhile, season salmon with salt and pepper to taste.
