Fragrant Salmon With Spring Onion

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb of fresh salmon fillet
  • 2 teaspoons salt
  • 1/2 teaspoon fresh ground black pepper
  • 2 1/2 cups water
  • 6 teaspoons spring onions, chopped
  • 1 teaspoon gingerroot, finely chopped
  • 1 1/2 teaspoons peanut oil
  • 2 teaspoons sesame oil

Recipe

  • 1 rub the salmon fillets with 1 teaspoon of the salt and the freshly ground black pepper pepper.
  • 2 in a wok, bring the water to the simmer.
  • 3 add the salmon fillets and simmer for about 3 minutes, cover tightly and turn off the heat.
  • 4 allow to stand for 4 minutes.
  • 5 in a small bowl, combine the spring onions, ginger and the remaining 1 teaspoon of salt.
  • 6 in a small pan combine the peanut oil and sesame oil and bring it to the smoking point.
  • 7 remove the salmon from the water and arrange on a platter.
  • 8 scatter the spring onion mixture on top and pour hot oil over it.
  • 9 serve immediately.
