Fragrant Salmon With Spring Onion

Ingredients
- Servings: 4
- 1 lb of fresh salmon fillet
- 2 teaspoons salt
- 1/2 teaspoon fresh ground black pepper
- 2 1/2 cups water
- 6 teaspoons spring onions, chopped
- 1 teaspoon gingerroot, finely chopped
- 1 1/2 teaspoons peanut oil
- 2 teaspoons sesame oil
Recipe
- 1 rub the salmon fillets with 1 teaspoon of the salt and the freshly ground black pepper pepper.
- 2 in a wok, bring the water to the simmer.
- 3 add the salmon fillets and simmer for about 3 minutes, cover tightly and turn off the heat.
- 4 allow to stand for 4 minutes.
- 5 in a small bowl, combine the spring onions, ginger and the remaining 1 teaspoon of salt.
- 6 in a small pan combine the peanut oil and sesame oil and bring it to the smoking point.
- 7 remove the salmon from the water and arrange on a platter.
- 8 scatter the spring onion mixture on top and pour hot oil over it.
- 9 serve immediately.
