Fragrant Fish

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 600 g fish fillets
  • 1/2 teaspoon finely grated lime rind
  • 1 garlic clove, crushed
  • 2 teaspoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon lime juice
  • pepper
  • fresh cilantro, to garnish
  • avocado relish
  • tomato, wedges
  • lime wedge

Recipe

  • 1 in a small bowl,combine the grated lime rind, garlic, olive oil, cumin, ground corinader, and pepper (to taste), to make a paste.
  • 2 spread the paste thinly on both sices of the fish.
  • 3 heat a nonstick, ridged skillet until hot and press the fish into the skillet to seal them.
  • 4 lower the heat and cook for 5 minutes.
  • 5 turn the fish over and cook for a further 4/5 minutes until the fish is cooked through,
  • 6 drain on paper towerls and transfer to a warmed serving plate.
  • 7 sprinkle the lime juice and chopped cilantro over the fish.
  • 8 serve immediately with avocado relish and tomato and lime wedges.
