Ingredients

- 600 g fish fillets
- 1/2 teaspoon finely grated lime rind
- 1 garlic clove, crushed
- 2 teaspoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon lime juice
- pepper
- fresh cilantro, to garnish
- avocado relish
- tomato, wedges
- lime wedge
Recipe
- 1 in a small bowl,combine the grated lime rind, garlic, olive oil, cumin, ground corinader, and pepper (to taste), to make a paste.
- 2 spread the paste thinly on both sices of the fish.
- 3 heat a nonstick, ridged skillet until hot and press the fish into the skillet to seal them.
- 4 lower the heat and cook for 5 minutes.
- 5 turn the fish over and cook for a further 4/5 minutes until the fish is cooked through,
- 6 drain on paper towerls and transfer to a warmed serving plate.
- 7 sprinkle the lime juice and chopped cilantro over the fish.
- 8 serve immediately with avocado relish and tomato and lime wedges.
