Grilled Salmon And Grapefruit Salad

Ingredients
- Servings: 4
- 1/2 vanilla bean, cut lengthwise
- 1 lemon, juice of
- 2 ruby red grapefruits, segmented, juice reserved
- 1/2 teaspoon honey
- 1/2 cup extra virgin olive oil, plus
- 1 tablespoon extra virgin olive oil
- 5 cups baby arugula
- 4 salmon fillets
- vegetable oil cooking spray
- salt and pepper
Recipe
- 1 coat grill with cooking spray, heat on high.
- 2 scrape vanilla seeds into a bowl. add lemon and grapefruit juices, honey, salt, pepper, and 1/2 cup of oil.
- 3 toss arugula with 3/4 of the dressing.
- 4 grill salmon skin side down for 1 minute and turn.
- 5 season with salt and pepper and add remaining oil.
- 6 cook until fish is opaque, approximately 2 minutes.
- 7 serve salad on plate. add salmon, grapfruit and remaining dressing.
