One Pan Dish Fish Curry

Ingredients
- Servings: 4
- 1 onion, diced
- 400 g potatoes, cut into 2cm cubes
- 200 g pumpkin, cut into 2cm cubes
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon minced garlic clove
- 1 teaspoon ground ginger
- 1/4 teaspoon dry crushed red pepper
- 1/4 teaspoon salt
- 1 (400 ml) can crushed tomatoes
- 1 cup chicken stock or 1 cup fish stock
- 500 g fish fillets
- 1/4 teaspoon garam masala powder
- 1 tablespoon slivered almonds
Recipe
- 1 heat a pan and cook onion till soft.
- 2 add potatoes and pumpkin and cook on high for 5min.
- 3 add spices, tomatoes, stock and bring to the boil.
- 4 turn down the heat and cook for 15min.
- 5 add fish and simmer for 5 min or till fish is cooked (do not stir).
- 6 add garam masala and serve is serving bowls.
