One Pan Dish Fish Curry

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 onion, diced
  • 400 g potatoes, cut into 2cm cubes
  • 200 g pumpkin, cut into 2cm cubes
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon minced garlic clove
  • 1 teaspoon ground ginger
  • 1/4 teaspoon dry crushed red pepper
  • 1/4 teaspoon salt
  • 1 (400 ml) can crushed tomatoes
  • 1 cup chicken stock or 1 cup fish stock
  • 500 g fish fillets
  • 1/4 teaspoon garam masala powder
  • 1 tablespoon slivered almonds

Recipe

  • 1 heat a pan and cook onion till soft.
  • 2 add potatoes and pumpkin and cook on high for 5min.
  • 3 add spices, tomatoes, stock and bring to the boil.
  • 4 turn down the heat and cook for 15min.
  • 5 add fish and simmer for 5 min or till fish is cooked (do not stir).
  • 6 add garam masala and serve is serving bowls.
