Pacific Salmon Cakes

Ingredients

  • Servings: 12
  • 1 lb salmon fillet
  • 1 teaspoon olive oil
  • 1/3 cup finely diced onion
  • 2 tablespoons corn
  • 1 tablespoon thinly sliced green onion
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons fine cornmeal
  • 1 tablespoon butter

Recipe

  • 1 coat salmon with oil and bake at 375 for 20 minutes. cool to the touch and flake salmon.
  • 2 in a bowl, combine salmon, onion, corn, green onions, salt and pepper. form into 12 patties. lightly coat both sides with cornmeal. refrigerate for at least 1 hour before serving.
  • 3 in a skillet, melt butter over medium and fry cakes until golden, 2-3 minutes per side.
