Pacific Salmon Cakes

Ingredients

- 1 lb salmon fillet
- 1 teaspoon olive oil
- 1/3 cup finely diced onion
- 2 tablespoons corn
- 1 tablespoon thinly sliced green onion
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons fine cornmeal
- 1 tablespoon butter
Recipe
- 1 coat salmon with oil and bake at 375 for 20 minutes. cool to the touch and flake salmon.
- 2 in a bowl, combine salmon, onion, corn, green onions, salt and pepper. form into 12 patties. lightly coat both sides with cornmeal. refrigerate for at least 1 hour before serving.
- 3 in a skillet, melt butter over medium and fry cakes until golden, 2-3 minutes per side.
