Baked Halibut With Paprika, Olives & Mushrooms

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 32 ounces halibut fillets, 1-inch thick
  • 4 teaspoons lemon juice, fresh
  • 2 tablespoons olive oil
  • 1 onion, roughly chopped
  • 1/2 lb mushroom, roughly chopped
  • 1 red bell pepper, roughly chopped
  • 1 1/2 tablespoons hot paprika
  • 12 green olives, cut in halves or thirds depending upon size

Recipe

  • 1 preheat oven to 375 degrees f. spray 10" baking dish with nonstick cooking spray. place halibut in baking dish. sprinkle lemon juice over halibut and season with salt and pepper.
  • 2 heat oil in medium nonstick skillet over medium high heat. add onion, mushrooms and bell pepper. saute until crisp-tender, about 6 minutes. add olives and paprika and stir until fragrant, about 1 minute. season to taste with salt and pepper.
  • 3 spread vegetable mixture over halibut. bake, uncovered, until halibut is cooked through, about 20 minutes.
