Feta Tomato-basil Fish

Ingredients
- Servings: 4
- 1 lb tilapia fillets or 1 lb cod fish fillet
- 1 small onion
- 2 teaspoons olive oil
- 1 teaspoon minced garlic
- 1 (14 1/2 ounce) can italian-style diced tomatoes
- 1/2 teaspoon dried basil
- 4 ounces feta cheese
Recipe
- 1 preheat oven to 350°f.
- 2 place fish fillets in a baking dish and bake for 15 minutes.
- 3 meanwhile, chop onion.
- 4 heat oil in a saucepan and add onions and garlic, sauteing until tender.
- 5 drain tomatoes and add to the pan.
- 6 add basil and bring to a boil.
- 7 reduce heat and simmer uncovered for 5 minutes.
- 8 top each fish fillet with tomato mixture and feta cheese.
- 9 place under broiler and broil until fish flakes easily with a fork, about 10 minutes.
