Feta Tomato-basil Fish

Ingredients

  • Servings: 4
  • 1 lb tilapia fillets or 1 lb cod fish fillet
  • 1 small onion
  • 2 teaspoons olive oil
  • 1 teaspoon minced garlic
  • 1 (14 1/2 ounce) can italian-style diced tomatoes
  • 1/2 teaspoon dried basil
  • 4 ounces feta cheese

Recipe

  • 1 preheat oven to 350°f.
  • 2 place fish fillets in a baking dish and bake for 15 minutes.
  • 3 meanwhile, chop onion.
  • 4 heat oil in a saucepan and add onions and garlic, sauteing until tender.
  • 5 drain tomatoes and add to the pan.
  • 6 add basil and bring to a boil.
  • 7 reduce heat and simmer uncovered for 5 minutes.
  • 8 top each fish fillet with tomato mixture and feta cheese.
  • 9 place under broiler and broil until fish flakes easily with a fork, about 10 minutes.
