Hazelnut Coated Salmon

- 1/4 cup hazelnuts
- 2 (6 ounce) salmon fillets
- 1 tablespoon apple butter
- 1/2 tablespoon dijon mustard
- 1/4 teaspoon thyme
- 1/4 teaspoon black pepper
Recipe
- 1 preheat oven to 375°f.
- 2 place hazelnuts on a baking sheet and bake for 8 minutes. finely chop hazelnuts.
- 3 increase oven to 450°f.
- 4 combine apple butter, mustard, thyme, and pepper. spread on salmon. top with hazelnuts.
- 5 bake until salmon just flakes with a fork, about 12 minutes, depending on thickness.
- 6 goes great with herbed rice or savory couscous.
