Hazelnut Coated Salmon

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1/4 cup hazelnuts
  • 2 (6 ounce) salmon fillets
  • 1 tablespoon apple butter
  • 1/2 tablespoon dijon mustard
  • 1/4 teaspoon thyme
  • 1/4 teaspoon black pepper

Recipe

  • 1 preheat oven to 375°f.
  • 2 place hazelnuts on a baking sheet and bake for 8 minutes. finely chop hazelnuts.
  • 3 increase oven to 450°f.
  • 4 combine apple butter, mustard, thyme, and pepper. spread on salmon. top with hazelnuts.
  • 5 bake until salmon just flakes with a fork, about 12 minutes, depending on thickness.
  • 6 goes great with herbed rice or savory couscous.
