Lemon & Herb Crusted Cod

Ingredients
- Servings: 2
- 12 ounces cod fish fillets (2 @ 6oz each)
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh coarse ground black pepper
- 1/2 lemon (for zest & juice)
- 1/2 tablespoon parsley
- 1/8 cup dry wine
- 1 tablespoon olive oil
- 1/4 cup plain breadcrumbs
Recipe
- 1 preheat oven to 350°f.
- 2 season filets with salt & pepper & place in baking dish. sprinkle with lemon juice, wine, and 1 1/2 t olive oil.
- 3 in small bowl, combine breadcrumbs, zest, & 1 t parsley. sprinkle cod with mixture and drizzle crumbs with 1 1/2 t olive oil.
- 4 place cod in oven & bake until fish is cooked through (12-15 minutes). remove from oven and turn on broiler.
- 5 place fish under broiler to brown breadcrumbs. remove & serve.
