Lemon & Herb Crusted Cod

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 12 ounces cod fish fillets (2 @ 6oz each)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh coarse ground black pepper
  • 1/2 lemon (for zest & juice)
  • 1/2 tablespoon parsley
  • 1/8 cup dry wine
  • 1 tablespoon olive oil
  • 1/4 cup plain breadcrumbs

Recipe

  • 1 preheat oven to 350°f.
  • 2 season filets with salt & pepper & place in baking dish. sprinkle with lemon juice, wine, and 1 1/2 t olive oil.
  • 3 in small bowl, combine breadcrumbs, zest, & 1 t parsley. sprinkle cod with mixture and drizzle crumbs with 1 1/2 t olive oil.
  • 4 place cod in oven & bake until fish is cooked through (12-15 minutes). remove from oven and turn on broiler.
  • 5 place fish under broiler to brown breadcrumbs. remove & serve.
