Ingredients
- 2 1/3 lbs marlin fillets
- louisiana brand cajun seasoning
- salt
- pepper
- 1/4 cup olive oil
- 2 lemon wedges
Recipe
- 1 season both fillets with cajun seasoning.
- 2 salt and pepper fish.
- 3 heat oil to hot in medium skillet (just starting to smoke).
- 4 slide in fish.
- 5 cook 2-3 minutes.
- 6 turn and cook 2-3 more minutes.
- 7 garnish with lemon wedge.
- 8 serve with tortilla chips and chunky tomato salsa.
