My Beach Grouper

Ingredients

- 2 lbs grouper fillets, skined
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 tablespoon finely minced parsley
- 1/4 teaspoon black pepper
- 1/4 teaspoon old bay seasoning
- 1/3 cup plain fine breadcrumbs
- 2 -3 tablespoons light mayonnaise
Recipe
- 1 prepare your baking pan or broiler with pam.
- 2 preheat oven to 350 degrees.
- 3 in a small dish, combine onion powder, garlic powder, minced parsley, black pepper, and old bay. reserve.
- 4 in another small dish, combine the olive oil with fresh lemon juice. reserve.
- 5 brush 2 tablespoons of the olive oil mixture on both sides of the fillets.
- 6 sprinkle both sides of the fillets with dry spice mixture.
- 7 sprinkle both sides of the fillets now with fine breadcrumbs.
- 8 bake fillets about 10 minutes; brush with remaining olive oil mixture and spread with mayonnaise.
- 9 broil until fish flakes easily; depending on thickness of fillets this can be from 3-6 minutes or so.
