Paprika Chicken

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 large red onion (sliced)
  • 1 tablespoon flour
  • 2 tablespoons olive oil
  • 450 g chicken breast fillets (chopped into chunks)
  • 1 tablespoon sweet paprika
  • 1/2 teaspoon cayenne pepper
  • 1 cup wine
  • 1 cup tomato puree
  • 1/2 cup water
  • 1 chicken stock cube
  • 1 teaspoon brown sugar
  • 1 red pepper (chopped)
  • 1 garlic clove (crushed)
  • parsley
  • 2 medium potatoes (chopped into chunks)
  • 2 tablespoons heavy cream

Recipe

  • 1 heat oil in a large pan.
  • 2 cook onions until soft.
  • 3 add chicken and cook until lightly browned.
  • 4 add paprika, cayenne and flour and cook for a minute.
  • 5 add the rest of the ingredients, except the potatoes and cream and simmer until the chicken is cooked (approx 15 minutes).
  • 6 boil potatoes or cook in microwave until just cooked.
  • 7 add cooked potatoes and cream and simmer for a couple more minutes.
  • 8 add salt and pepper to taste.
  • 9 serve with rice and sweetcorn.
