Paprika Chicken

Ingredients

- 1 large red onion (sliced)
- 1 tablespoon flour
- 2 tablespoons olive oil
- 450 g chicken breast fillets (chopped into chunks)
- 1 tablespoon sweet paprika
- 1/2 teaspoon cayenne pepper
- 1 cup wine
- 1 cup tomato puree
- 1/2 cup water
- 1 chicken stock cube
- 1 teaspoon brown sugar
- 1 red pepper (chopped)
- 1 garlic clove (crushed)
- parsley
- 2 medium potatoes (chopped into chunks)
- 2 tablespoons heavy cream
Recipe
- 1 heat oil in a large pan.
- 2 cook onions until soft.
- 3 add chicken and cook until lightly browned.
- 4 add paprika, cayenne and flour and cook for a minute.
- 5 add the rest of the ingredients, except the potatoes and cream and simmer until the chicken is cooked (approx 15 minutes).
- 6 boil potatoes or cook in microwave until just cooked.
- 7 add cooked potatoes and cream and simmer for a couple more minutes.
- 8 add salt and pepper to taste.
- 9 serve with rice and sweetcorn.
