Parmesan Catfish

Ingredients

- 4 large catfish fillets
- 2 beaten eggs
- 1/2 cup milk
- 1 cup soft breadcrumbs
- 1 cup grated parmesan cheese
- 2 teaspoons minced garlic
- 1/4 cup chopped fresh parsley
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1 teaspoon course-ground black pepper
- nonstick cooking spray
Recipe
- 1 heat oven to 400*.
- 2 rinse fillets and pat dry.
- 3 mix eggs and milk in a small bowl.
- 4 combine remaining ingredients in another bowl.
- 5 dip fillets into egg mixture, and then into bread crumb mixture, coating evenly.
- 6 place fillets, rounded-side up, on a greased baking sheet.
- 7 spray fillets lightly with non-stick cooking spray and bake, uncovered, for about 15 minutes, or until fish flakes when tested with a fork.
