Parmesan Catfish

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 4 large catfish fillets
  • 2 beaten eggs
  • 1/2 cup milk
  • 1 cup soft breadcrumbs
  • 1 cup grated parmesan cheese
  • 2 teaspoons minced garlic
  • 1/4 cup chopped fresh parsley
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon course-ground black pepper
  • nonstick cooking spray

Recipe

  • 1 heat oven to 400*.
  • 2 rinse fillets and pat dry.
  • 3 mix eggs and milk in a small bowl.
  • 4 combine remaining ingredients in another bowl.
  • 5 dip fillets into egg mixture, and then into bread crumb mixture, coating evenly.
  • 6 place fillets, rounded-side up, on a greased baking sheet.
  • 7 spray fillets lightly with non-stick cooking spray and bake, uncovered, for about 15 minutes, or until fish flakes when tested with a fork.
