Pickled Herring

Ingredients
- Servings: 4
 
- 1/4 cup salt 
 
- 1 1/2 lbs fresh herring fillets, boned 
 
- 1/2 cup vinegar 
 
- 1/2 cup sugar 
 
- 1 tablespoon allspice berry 
 
- 1 tablespoon peppercorns 
 
- 2 bay leaves 
 
- 1 red onion, thinly sliced 
 
Recipe
- 1 dissolve 3 tablespoons of the salt in 3 cups of cold water. 
 
- 2 put the herring in the salt water, cover and refrigerate for 12 hours. 
 
- 3 put the remaining salt, the vinegar, sugar, allspice berries, peppercorns, and bay leaves in a small saucepan with 1 cup of water. 
 
- 4 stir this mixture over med/high heat until the sugar dissolves, then remove from the heat and cool. 
 
- 5 remove the herring from the salt water and put in a shallow baking dish. 
 
- 6 put the onions on top of the fish, then pour in the pickling mixture. 
 
- 7 cover and refrigerate overnight.
