Pickled Herring

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1/4 cup salt
  • 1 1/2 lbs fresh herring fillets, boned
  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 1 tablespoon allspice berry
  • 1 tablespoon peppercorns
  • 2 bay leaves
  • 1 red onion, thinly sliced

Recipe

  • 1 dissolve 3 tablespoons of the salt in 3 cups of cold water.
  • 2 put the herring in the salt water, cover and refrigerate for 12 hours.
  • 3 put the remaining salt, the vinegar, sugar, allspice berries, peppercorns, and bay leaves in a small saucepan with 1 cup of water.
  • 4 stir this mixture over med/high heat until the sugar dissolves, then remove from the heat and cool.
  • 5 remove the herring from the salt water and put in a shallow baking dish.
  • 6 put the onions on top of the fish, then pour in the pickling mixture.
  • 7 cover and refrigerate overnight.
  • 8 serve right from the dish, yum!
