Quick Herbed Orange Roughy

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons dry breadcrumbs
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 4 (6 ounce) orange roughy fillets
  • 1 tablespoon butter
  • 1/4 cup wine or 1/4 cup reduced-sodium chicken broth
  • 1 tablespoon reduced sodium soy sauce
  • 1 tablespoon onion, finely chopped

Recipe

  • 1 combine the first six ingredients in a small dish.
  • 2 coat both sides of filets.
  • 3 coat a large non-stick skillet with cooking spray and add butter.
  • 4 cook filets in butter over medium heat for approximately 5 minutes.
  • 5 turn each filet and stir in the rest of the ingredients.
  • 6 cook 4-6 minutes longer or until the fish flakes easily with a fork.
