Red Snapper Baked Alaska Style

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon butter
  • 2 lbs red snapper fillets
  • salt
  • pepper
  • 2 egg whites
  • 2 tablespoons chopped fresh parsley
  • dijon mustard
  • 1 teaspoon dried tarragon
  • 3 tablespoons fresh breadcrumbs

Recipe

  • 1 preheat the oven to 375 degrees f (190 degrees c).
  • 2 spread butter into the bottom of a 9x13 inch baking dish.
  • 3 arrange fish fillets in a single layer over the bottom of the pan, and sprinkle with salt and pepper.
  • 4 2 bake for about 12 minutes in the preheated oven.
  • 5 meanwhile, whip egg whites in a clean dry bowl until stiff peaks form.
  • 6 fold in the parsley, mustard and tarragon.
  • 7 spread the egg mixture over the fish in a layer about 1 inch thick.
  • 8 sprinkle bread crumbs over the top.
  • 9 3 return to the oven, and bake for about 6 more minutes, or until meringue is golden, and fish flakes with a fork.
