Red Snapper Scampi

Ingredients
- Servings: 4
- 1/4 cup light margarine, softened
- 1 tablespoon wine
- 1 1/2 teaspoons minced garlic
- 1/2 teaspoon grated lemon peel
- 1/8 teaspoon black pepper
- 1 1/2 lbs red snapper fillets (can use orange roughy or grouper if desired)
Recipe
- 1 preheat oven to 450.
- 2 combine margarine, wine, garlic, lemon peel and pepper in small bowl.
- 3 place fish on foil lined shallow baking pan.
- 4 top with margarine mixture.
- 5 bake 10-12 minutes or until fish begins to flake easily.
