Alice Springs Chicken

Ingredients
- Servings: 4
- 4 chicken breast fillets, skinless 
- 2 tablespoons extra virgin olive oil 
- 2 -4 tablespoons dijon mustard 
- 6 slices bacon, sliced in half and fried until crispy 
- 1 cup fresh sliced mushrooms 
- 3 cups grated cheddar cheese 
-  salt, pepper 
Recipe
- 1 season chicken breasts with salt and pepper. 
- 2 sauté in oil, until golden and cooked through. 
- 3 remove from pan, spread with dijon mustard and place in roasting dish. 
- 4 cover with layer of mushrooms and bacon, then top with cheese. 
- 5 heat in oven at 400º for 5 minutes, just until cheese melts.
