Healthy Salmon Corn Chowder

Ingredients
- Servings: 4
- 1 tablespoon olive oil 
- 1 chopped onion 
- 1/2 cup chopped celery 
- 2 garlic cloves, crushed 
- 2 cups diced potatoes 
- 2 carrots, diced 
- 2 cups milk 
- 2 cups chicken broth 
- 3/4 cup corn niblets 
- 1/2 cup water 
- 2 tablespoons cornstarch 
- 1 salmon fillet, cubed 
-  salt and pepper 
- 1 cup shredded cheese 
Recipe
- 1 heat the olive oil in a large saucepan over medium heat and sauté the onions, garlic and celery for 3 minutes. 
- 2 add the potatoes, carrots, milk, chicken broth and cook stirring occasionally, for 20 minutes. 
- 3 add corn last 5 minutes. 
- 4 stir cornstarch with water; add to chowder to thicken it. 
- 5 at this point add salmon and let it poach a few minutes being careful no to overcook it. 
- 6 taste and adjust the seasoning.
