Mexican Haddock

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb haddock fillet
  • vegetable oil cooking spray
  • 1/4 cup salsa
  • 2 tablespoons mayonnaise (regular or lite)
  • 2 tablespoons monterey jack cheese, shredded
  • 1/2 teaspoon black pepper

Recipe

  • 1 coat each filet with with cooking spray.
  • 2 place fish in a baking dish.
  • 3 mix remaining ingredients until well blended and spread over fish.
  • 4 bake at 425 for 20 minutes. fish is done when it flakes when tested with a fork.
