Chinese Lamb With Shallots

Ingredients

- 500 g lamb fillets
- 2 tablespoons oil
- 4 shallots, thinly slices
- 1 red chile, seeded and diced
- 1 tablespoon soy sauce
- 1 teaspoon sherry wine
- 1 tablespoon cornflour
- 2 cloves garlic, crushed
- 1 tablespoon soy sauce
- 2 teaspoons sugar
Recipe
- 1 cut the lamb across the grain into 5mm thick slices.
- 2 place slices between greaseproof paper or plastic wrap and pound lightly to tenderise and flatten.
- 3 prepare the marinade by combining the marinade ingredients.
- 4 add the lamb and marinate for 20 minutes.
- 5 heat the oil in a wok over high heat.
- 6 drain the lamb and add to the pan.
- 7 stirfry for 5 minutes.
- 8 add the shallots, chilli, soy sauce and sherry.
- 9 cook another 1-2 minutes.
- 10 serve immediately with rice or noodles and steamed vegetables.
