Chinese Lamb With Shallots

Total Time: 42 mins Preparation Time: 35 mins Cook Time: 7 mins

Ingredients

  • Servings: 4
  • 500 g lamb fillets
  • 2 tablespoons oil
  • 4 shallots, thinly slices
  • 1 red chile, seeded and diced
  • 1 tablespoon soy sauce
  • 1 teaspoon sherry wine
  • 1 tablespoon cornflour
  • 2 cloves garlic, crushed
  • 1 tablespoon soy sauce
  • 2 teaspoons sugar

Recipe

  • 1 cut the lamb across the grain into 5mm thick slices.
  • 2 place slices between greaseproof paper or plastic wrap and pound lightly to tenderise and flatten.
  • 3 prepare the marinade by combining the marinade ingredients.
  • 4 add the lamb and marinate for 20 minutes.
  • 5 heat the oil in a wok over high heat.
  • 6 drain the lamb and add to the pan.
  • 7 stirfry for 5 minutes.
  • 8 add the shallots, chilli, soy sauce and sherry.
  • 9 cook another 1-2 minutes.
  • 10 serve immediately with rice or noodles and steamed vegetables.
