Grilled Salmon In Lime Sauce

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 small tomato, chopped
  • 1 small sweet red pepper, chopped
  • 2 green onions, thinly sliced
  • 2/3 cup freshly squeezed lime juice
  • 1/2 teaspoon lime zest
  • 1/4-1/2 teaspoon cayenne pepper
  • 2 tablespoons canola oil
  • 1 (1 1/2 lb) salmon fillets

Recipe

  • 1 combine the first seven ingredients in a large resealable plastic bag; mix well.
  • 2 cut salmon into four pieces; place in bag.
  • 3 seal and turn to coat; refrigerate for 30 minutes, turning to coat several more times.
  • 4 drain and discard marinade from fish and vegetables.
  • 5 place each piece of salmon and about 1/3 cup of vegetables on a piece of double-layered heavy-duty foil (about 18 inches square).
  • 6 fold foil around mixture and seal tightly.
  • 7 grill, covered, over medium heat for 15 to 20 minutes, or until salmon flakes easily with a fork.
