Houston's Spicy Caesar Dressing

Ingredients

- 1 egg yolk (optional)
- 1 tablespoon garlic, minced
- 2 teaspoons dijon mustard
- 2 anchovy fillets, minced
- 1 1/2 teaspoons pepper, coarsely ground
- 1/4 teaspoon salt
- 1/2 teaspoon coriander, ground
- 1/2 teaspoon cumin, ground
- 1 teaspoon worcestershire sauce
- 2 teaspoons water, cold
- 1/2 cup olive oil, extra virgin
- 1/2 cup canola oil
- 1 1/2 tablespoons sambal chili paste (thai chili paste available at asian markets)
- 1/2 lemon, juiced
- 1/2 lime, juiced
- 3 tablespoons parmesan cheese, freshly grated
Recipe
- 1 combine yolk, garlic, mustard, anchovies, pepper, salt, coriander, cumin, worcestershire sauce and water in a food processor. process until smooth. with motor running, pour oils in a slow, steady stream into dressing mixture. when all oil has been incorporated, add chili paste, lemon juice, lime juice, and parmesan cheese. process until smooth.
