Macadamia-crusted Tilapia With Pineapple Salsa

Ingredients

- 1/2 cup flour
- 1 egg, lightly beaten
- 1 cup crushed macadamia nuts
- 4 tilapia fillets
- 1 cup fresh pineapple, finely chopped
- 1 tablespoon red onion, minced
- 1/2 jalapeno, minced
- 1/4 cup cilantro, minced (1/4 c before mincing)
Recipe
- 1 preheat oven to 400 degrees. dredge fish in flour, then egg, then nuts. place on oiled baking sheet. bake 20 minutes until golden brown.
- 2 make the salsa as far ahead as possible to allow time for flavors to meld. combine all salsa ingredients and refrigerate. serve over fish.
