Macadamia-crusted Tilapia With Pineapple Salsa

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1/2 cup flour
  • 1 egg, lightly beaten
  • 1 cup crushed macadamia nuts
  • 4 tilapia fillets
  • 1 cup fresh pineapple, finely chopped
  • 1 tablespoon red onion, minced
  • 1/2 jalapeno, minced
  • 1/4 cup cilantro, minced (1/4 c before mincing)

Recipe

  • 1 preheat oven to 400 degrees. dredge fish in flour, then egg, then nuts. place on oiled baking sheet. bake 20 minutes until golden brown.
  • 2 make the salsa as far ahead as possible to allow time for flavors to meld. combine all salsa ingredients and refrigerate. serve over fish.
