Chicken Stroganoff

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • canola oil (for frying)
  • 1 large onion, chopped
  • 2 garlic cloves, crushed
  • 2 teaspoons mustard seeds (brown)
  • 500 g chicken fillets, cut into strips
  • 250 g button mushrooms, sliced
  • 2 tablespoons coarse grain mustard
  • 1 teaspoon mustard powder
  • 2 tablespoons brandy
  • 1/2 cup chicken stock
  • 1/3 cup cream
  • salt
  • ground pepper

Recipe

  • 1 sauté onion and garlic gently in heated oil till glossy.
  • 2 add mustard seeds and cook till they begin to pop!
  • 3 (about 2 minutes) then add chicken and toss to sear.
  • 4 add mushrooms and stir fry for 1 minutes.
  • 5 stir in wholegrain mustard, mustard powder and brandy.
  • 6 add stock and simmer for 4-5 minutes.
  • 7 add cream and heat through (don't boil).
  • 8 season to taste.
  • 9 i serve it with buttered noodles and steamed mangetout.
