Horseradish Crusted Salmon Fillet

Ingredients

- 16 ounces salmon fillets, skinless
- 1/2 cup low-fat mayonnaise
- 1/2 cup horseradish
- 1 ounce fresh chives, finely chopped
- 1/2 ounce fresh lemon juice
- 1/2 cup matzo meal
- cherry tomatoes
- olive oil
- micro greens or arugula or mache
- lemon vinaigrette
Recipe
- 1 combine mayonnaise, horseradish, chives and lemon juice in a mixing bowl.
- 2 with a spoon, lightly coat the salmon fillets with the mixture.
- 3 dredge in the matzo meal.
- 4 bake in a preheated oven at 425degf for 12-14 minutes.
