Mediterranean Style Orange Roughy

Ingredients

- 4 (6 ounce) orange roughy fillets, 1/2 inch thick
- 4 ounces feta cheese with dried basil and tomato or 4 ounces plain feta cheese
- 1/4 cup low-fat sour cream
- 1/4 cup finely chopped red onion
- 1 garlic clove, minced finely
- 3 tablespoons capers, drained and rinsed
- 2 small plum tomatoes, seeded, and finely chopped
- 2 teaspoon lemons, rind of, grated
- 1 teaspoon dried oregano
- 1/2 teaspoon fresh ground black pepper
- 1/2 teaspoon kosher salt
- 1 -2 teaspoon wine (optional)
Recipe
- 1 preheat oven to 400°f.
- 2 line baking sheet with foil.
- 3 lightly spray foil with non-stick spray.
- 4 season fish on both sides with kosher salt and fresh ground pepper.
- 5 in a medium bowl combine feta, sour cream, red onion, garlic, capers, tomatoes, lemon peel and oregano and stir until thoroughly combined.
- 6 add wine to feta cheese mixture if desired.
- 7 arrange fish on prepared baking sheet.
- 8 spread cheese topping over fish.
- 9 bake until fish is just cooked through, approximately 10-12 minutes.
