Northern Pike In Wine Sauce

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1/2 cup flour
  • salt
  • pepper
  • 4 lbs pike fillets
  • 3 tablespoons vegetable oil
  • 3/4 cup onion, chopped
  • 1/2 cup tomato, peeled and chopped
  • 1/2 cup dry wine
  • 1/2 cup sliced mushrooms
  • 2 tablespoons parsley, chopped

Recipe

  • 1 season flour with salt and pepper.
  • 2 roll fish in seasoned flour.
  • 3 heat oil in a large skillet.
  • 4 saute fish and onion until browned on both sides, 4-5 minutes per side.
  • 5 remove fish and keep warm. leave the onions in the pan.
  • 6 add tomatoes and wine to the onions.
  • 7 cook about 5 minutes.
  • 8 add mushrooms and parsley and cook until heated through, 1-2 minutes.
  • 9 pour sauce over the fish.
  • 10 garnish with more parsley, if desired.
