Northern Pike In Wine Sauce

Ingredients

- 1/2 cup flour
- salt
- pepper
- 4 lbs pike fillets
- 3 tablespoons vegetable oil
- 3/4 cup onion, chopped
- 1/2 cup tomato, peeled and chopped
- 1/2 cup dry wine
- 1/2 cup sliced mushrooms
- 2 tablespoons parsley, chopped
Recipe
- 1 season flour with salt and pepper.
- 2 roll fish in seasoned flour.
- 3 heat oil in a large skillet.
- 4 saute fish and onion until browned on both sides, 4-5 minutes per side.
- 5 remove fish and keep warm. leave the onions in the pan.
- 6 add tomatoes and wine to the onions.
- 7 cook about 5 minutes.
- 8 add mushrooms and parsley and cook until heated through, 1-2 minutes.
- 9 pour sauce over the fish.
- 10 garnish with more parsley, if desired.
