Gh Chili-spiced Cod

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 tablespoon yellow cornmeal
  • 1 tablespoon all-purpose flour
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 4 cod fish fillets (about 6 oz each)
  • 2 tablespoons margarine or 2 tablespoons butter

Recipe

  • 1 on waxed paper, combine cornmeal, flour, chili powder, and salt; use to coat cod fillets.
  • 2 heat nonstick 12-inch skillet until hot over medium-high heat.
  • 3 add 1 tablespoon margarine or butter; let melt.
  • 4 add cod fillets and cook 4 minutes.
  • 5 reduce heat to medium; turn fillets.
  • 6 add remaining 1 tablespoon margarine or butter and cook cod 4 to 6 minutes longer until fish flakes easily when tested with a fork.
