Healthy, Easy Feta Chicken For Two

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 1 large chicken breast
  • 1 tablespoon red wine vinegar
  • 1 tablespoon lemon juice
  • 1/2 tablespoon vegetable oil
  • pepper, to taste
  • 1/2 teaspoon dried oregano leaves
  • 1/2 cup reduced-fat feta cheese

Recipe

  • 1 fillet the chicken breast into two pieces of equal size. (this is easier if the chicken breast is partially frozen).
  • 2 mix the vinegar, lemon juice, oil, pepper and oregano. marinate the chicken in the mixture for 1 hour (or more).
  • 3 saute the chicken over medium-high heat, 10 minutes on each side.
  • 4 sprinkle feta over each fillet.
