Crumb Coating For Fish

Ingredients
- 1 cup crushed saltine (about 30 crackers)
- 1 cup cornmeal
- 2 tablespoons paprika
- 5 teaspoons seafood seasoning
- 2 teaspoons salt
- 1 -1 1/2 teaspoon pepper
- 6 lbs sole fillets, 1 for each batch
Recipe
- 1 in a large resealable plastic bag, combine the first six ingredients.
- 2 store in a cool dry place for up to 6 months.
- 3 makes 6 batches (2 cups total) to prepare fish: place 1/3 cup coating in a shallow bowl; coat both sides of the fillets.
