Ingredients

- 1 cup cold water
- 1 egg
- 1 teaspoon salt
- 2 teaspoons vegetable oil
- 1 cup flour
- 1/8 teaspoon yellow food coloring (optional)
- 6 boneless mahi mahi fillets
- oil (for frying)
- 2 cups pineapple juice
- 1 cup sugar
- 2 1/2 tablespoons cornstarch
- 3/4 cup cider vinegar
- 1/2 cup ketchup
- 1/2 cup pineapple tidbits
Recipe
- 1 for sauce, combine pineapple juice, sugar and cornstarch in a small saucepan. add vinegar, ketchup and pineapple tidbits. cook and stir until mixture comes to a boil and is thickened. keep warm while fish is cooking.
- 2 in a mixing bowl, combine water, egg, salt, and vegetable oil. beat slowly to blend. gradually add flour, beating to form a smooth batter. add food coloring if desired.
- 3 dip fish fillets into batter and fry in hot oil until golden brown (5 to 6 minutes).
- 4 remove and drain on absorbent towels. serve with pineapple sauce.
