Mahi Mahi With Pineapple Sauce - Disneylands Tahitian Terrace

Ingredients

  • Servings: 6
  • 1 cup cold water
  • 1 egg
  • 1 teaspoon salt
  • 2 teaspoons vegetable oil
  • 1 cup flour
  • 1/8 teaspoon yellow food coloring (optional)
  • 6 boneless mahi mahi fillets
  • oil (for frying)
  • 2 cups pineapple juice
  • 1 cup sugar
  • 2 1/2 tablespoons cornstarch
  • 3/4 cup cider vinegar
  • 1/2 cup ketchup
  • 1/2 cup pineapple tidbits

Recipe

  • 1 for sauce, combine pineapple juice, sugar and cornstarch in a small saucepan. add vinegar, ketchup and pineapple tidbits. cook and stir until mixture comes to a boil and is thickened. keep warm while fish is cooking.
  • 2 in a mixing bowl, combine water, egg, salt, and vegetable oil. beat slowly to blend. gradually add flour, beating to form a smooth batter. add food coloring if desired.
  • 3 dip fish fillets into batter and fry in hot oil until golden brown (5 to 6 minutes).
  • 4 remove and drain on absorbent towels. serve with pineapple sauce.
