Cheesy Potato Topped Chicken

Ingredients
- Servings: 6
- 3 medium potatoes, grated
- 1 medium onion, grated (i use a red onion)
- 1 cup grated parmesan cheese
- 2 teaspoons chopped fresh thyme or 1 teaspoon dried thyme
- 1 teaspoon chicken stock powder
- 1/2 teaspoon fresh ground black pepper
- 1 egg yolk
- 1 kg chicken breast fillet
- cooking spray
Recipe
- 1 combine potatoes, onion, cheese, thyme, stock, pepper and egg yolk in a medium bowl.
- 2 place chicken breasts on wire rack over an oven tray.
- 3 press potato mixture on top of chicken; coat potato mixture with the cooking spray.
- 4 bake, uncovered, in a hot oven about 30 minutes or until chicken is tender.
- 5 then place under grill until topping is browned.
