Chicken With Thyme Butter Sauce

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 4 chicken breast fillets
  • plain flour
  • 1/4 cup olive oil
  • 125 g butter
  • 1 tablespoon fresh thyme, chopped
  • 2 shallots, chopped
  • 1/4 cup lemon juice

Recipe

  • 1 toss chicken in flour and shake away excess.
  • 2 heat oil and half the butter in a frypan, add chicken and cook over medium heat for about 10 mins or until chicken is tender.
  • 3 drain chicken & discard pan juices.
  • 4 heat remaining butter in same pan and add thyme and shallots.
  • 5 stir over medium heat for about 2 mins or until shallots are soft.
  • 6 stir in lemon juice and cook for another 3 mins approximately.
  • 7 serve over chicken.
