Chicken With Thyme Butter Sauce

Ingredients
- Servings: 4
- 4 chicken breast fillets
- plain flour
- 1/4 cup olive oil
- 125 g butter
- 1 tablespoon fresh thyme, chopped
- 2 shallots, chopped
- 1/4 cup lemon juice
Recipe
- 1 toss chicken in flour and shake away excess.
- 2 heat oil and half the butter in a frypan, add chicken and cook over medium heat for about 10 mins or until chicken is tender.
- 3 drain chicken & discard pan juices.
- 4 heat remaining butter in same pan and add thyme and shallots.
- 5 stir over medium heat for about 2 mins or until shallots are soft.
- 6 stir in lemon juice and cook for another 3 mins approximately.
- 7 serve over chicken.
